Simple Instructions for Starting with Indirect and Finishing with Direct Heat Step One: Season the steak with a little bit of salt and pepper. Cook for 30 seconds either side and serve. The reverse sear method slowly cooks a thick steak first over indirect heat, and then finishes the cook with a direct flame sear.
